Thrift Store Lamp Shade Revamp!

I hope you all enjoyed your holiday!
Our kids were sick, but we made the best of it! Now we're getting slammed by a snow storm!
Oh joy.

Anywho, I was at a thrift store this morning looking around and found a neat lamp. I decided to revamp it!


Everything I used came from the thrift store. I bought a lamp shade, lamp base and an old bed skirt in the color I wanted.

Grand total: $9.47 before tax
(P.S. Isn't my new iPhone case perty? Cole broke my last one.)


I started by cutting strips of the dust ruffle. I'm terrible at tutorials because I don't measure anything! I eye everything and cross my fingers that it turns out right. In this case, I cut strips long enough to go around the lamp shade 2.5 times. I just took the fabric and wrapped it around each part of the shade (since it gets smaller at the top) and cut where I estimated it to be 2.5 times around.

I then hemmed the edges, pinned the pleats (above) and sewed a straight line right down the middle of the pleats.


I then pinned the pleated fabric around the shade.
After that I used a glue gun and put a thin line under the stitching of each ruffle to glue it to the shade.
Be careful to get right on the stitching on the thick parts of the pleats so that the glue doesn't show through when you turn the lamp on.


Viola!

I think it's pretty dang pretty if I say so myself. :)

Tis' The Season

I just wanted to share something that I thought was oh-so-sweet!


There is a church in our area who loves to give to military families during the holidays.
We don't sign up for anything, I suppose they contact our community to know how many children we have and their ages. Some years we get something, some years we don't, it's completely random.
Today we opened the door to a box with 3 gifts for our daughter, 2 for our son, candy canes and a $50 grocery store gift certificate!

Isn't that sweet?
 I always send a thank you note when we receive something but this time I called and personally left a message on the pastors answering machine. I wanted to let them know how heart warming it's been and we've really appreciated it for the last three years we've lived here.

So thank you Massepequa Reformed Church!

And something else oh-so-sweet....

My sweet girl wanted to wrap the gifts she got for her brother....
this is her first time wrapping gifts and she did a great job. Even though she used up all the tape and had to move onto to packing tape...lmbo.

I hope you all enjoy your Christmas and remember that Christmas is so much more than those goodies under your trees!

Reindeer Cake Pops From Hell

I found out today, that I am not good at, nor do I have the patience for cake pops. The one on the right is the one my 8 year old made, and ones on the left are mine. Our cake pops look like their parents are also their aunt and uncle.

Kennedy was very proud of her cake pop!


I soon gave up on making them into reindeer and just made them into yummy.
I also dipped some pretzels in the extra chocolate and added M&Ms.

My pops kept falling off the sticks. I don't know if I didn't use enough chocolate before inserting the stick, didn't let them cool long enough, if the cake pops were too big or what.

They are simple to make though, make a cake (I used a box cake), when it's completely cooled crumble it up and add one can of icing. Cool it for a few mins. then roll them into balls. Cool for 10 mins. and then dip the lollipop sticks into melted chocolate and insert into the cake balls (leave them on the parchment paper while they dry)
After you've let that harden, dip them in melted chocolate and tap off any excess.

Things you should know about me if we're going to be bff's....

I'm about to turn 27 and although I don't think 27 is old for others, well, for me...well we'll just say I'm freaking out just a little.
 
I have two gorgeous kids! They drive me absolutely insane at times, and I'm not the most patient all the time... but I love them more than anything else in this world.
 
When I say I have an amazing husband and I'm truly happy, I mean it. It's not a front.
Sure, we have our ups and downs like everyone, he makes me want to hold the pillow over his face from time to time when he's asleep..(lmbo, totally kidding...well, sort of)... but we have a deep respect and love for each other that can't be touched or tarnished by anything in this world, together we stand strong.
 
I have OCD, diagnosed by a professional.
I can't have volumes on TV etc. on odd numbers,
certain noises make my skin crawl and I have to wipe the surface it came from...
sounds crazy but I'm a normal, sane person.. I swear! lol  
 
I love to eat. I'm very lucky I'm not a lot bigger than I am!
 
I truly believe I'm addicted to sugar. You do know it's one of the most powerful substances, right?
   
I loathe cleaning, but I hate a dirty house even more.
I spend most of my time doing something I loathe.
 
I'm a light sleeper. I have to wear earplugs at night to sleep.

I can keep secrets!

I'm a loyal and honest friend.

My husband is in the Marine Corps (Duh, look at the blog title!)

Marines hate to be called soldiers. I learned that the hard way!

I love anything crafty!
I usually pick up on anything crafty easily, but I couldn't knit for the life of me!

I'm pretty outspoken with my beliefs.

Are You Kidding Me?

We have exactly 27 days until our cross country move from New York to California. We decided to sell my husbands car instead of paying to ship it. Well, we had a buyer and couldn't find the freaking title!! Now I'm sitting here, not so patiently, waiting for the DMV in NC to open (where we bought the car) so I can get on the phone and see if there is any way we can rush a copy of the title.

I also have a mile long to do list to prepare for the move, a doctors appointment for me this afternoon, a doctors appointment for Kennedy tomorrow, on top of this being Christmas week, my in-laws are coming in town on the 28th (so excited but I'd like to finish up a bunch of crap here so I can actually spend time with them!) then Kennedy's 9th birthday is the following weekend. Oh, and my son thought it would be cute to wake up at 3 this morning.

I'm....stressed.....

FYI- The Marine Corps has a program called Toys For Tots. I'm sure you all know, but if you don't, people donate toys for children in need. My husband is running the warehouse for it this year....

Cooking Challenge Day 7

I completed my cooking challenge! Woohoo! Now, I didn't do 7 consecutive days, but I did 7 days. So, I still finished.

Tonight was a taco bake recipe my friend Kristy sent to me. It was yummy.

Taco Bake:

Brown your ground beef, add taco season and a tad bit of water.
When it's cooked, add half a jar of taco sauce (sauce, not salsa)
Layer corn chips in a baking dish and layer with chips, cheese and meat.

I also mixed some sour cream and a can of refried beans together and layered that in there too. It was very good and my 8 year old LOVED it!

Cooking Challenge Day 6--- And a Little Something Sweet!

Tonight I made Chicken and Dumplings for the very first time and it didn't kill my family!!
WooHoo!
It was easy and delish.
I didn't follow a recipe, but I did look at one to get an idea of what to use.

I cooked three, chopped chicken breasts in a little olive oil/butter mixture, I added two chopped fresh carrots and one chopped stalk of celery after the chicken was done. Then I added a can of cream of chicken soup and some chicken broth. I didn't measure, like I said before I rarely do! I just made it nice and soupy (it thickens later too). I threw in some sage, thyme, salt and pepper. Boiled it until the carrots were just done and then I threw in the dumplings. I totally cheated there, cut up biscuits! I continued to boil, covered and stirring occasionally, for about 10 mins.





And for the sweet stuff! Literally....
I have the best mother in law alive! We got a box of goodies, which we do each year, and this year it had
one of my favorite things!
Jack Daniels Pie
Yes, yes you read that right. I don't even like Jack Daniels but it's the BEST pie, chocolatey and delicious!
The box she sent it in was even better... oh how I miss my home state of Texas!






Thankful Tuesday



Today, I'm thankful for;

The snow my daughter has been so patiently waiting for & was thrilled to see this morning!
Family who loves us (and sent us a Jack Daniels pie and fudge! Thanks gramma! lol)
My wonderful, perfect in all his imperfect-ness, husband who goes out of his way to care for his family.
My whacky little hyper 17 month old boy! Life just wouldn't be the same without chaos he creates! lol
To have a warm place to call *home* this winter.

Time For Vacation Yet?!?!

Last night, I was telling my husband how it was time to go on vacation again! Not family vacation, us vacation. This is when he informed me that we just went on vacation 8 months ago... WHAT?! It seems like it was years go! Well, I told him to find out the end date for his class in Twentynine Palms, it's sometime in November. I'm thinking if we can time it just right, we can go home (Texas) for Thanksgiving and leave the kids with gramma and grampa so we can go cruising (not on Thanksgiving Day, after or before)!! I'm thinking a cruise to the Bahamas this time... last time was the Grand Cayman Islands, Jamaica and Cozumel. I'm genius I tell you... unfortunately it's so hard to plan anything in advance with the military! Ugh.
To get my by until I'm lying on a tropical island with a drink in hand....

Good Morning America

So, my friend over at Goodnight Moon got me to thinkin'...
Our PCS (military move) is in about 5 weeks. I've really done nothing. Although the military does the actual packing and moving, I still have much to do.... for instance, go through our hoards of crap and throw out stuff that really doesn't need to make the move with us, organize the house (unpacking a kitchen box with toys in it annoys me, and the packers pack everything, no matter where it is), get our medical records from our doctors (I have dental already), get school paperwork for K, look for rentals in California just in case we don't get into base housing in a timely manner, plan our cross country trip (any ideas on what we should stop and see? We're going from NY to CA so we're passing through a lot of states), make our packing list for things we are bringing with us in the truck, put my 30 day notice into our base housing here, find a company to ship our car to CA for us (I'm not driving two vehicles, that means one of us gets stuck in the car with a 17 month old and 9 year old ALONE! Ahhhh!) Don't you love that huge run on sentence?!
Oh yeah, while I'm on that topic, any tips for traveling with a 17 month old who is very active and can't sit still? God be with us.
 
Hmmm... I'm sure I'm forgetting something......

Not Such a Happy Post- Prayer Needed

Good evening everyone,
I'm really sad to say that a family is in major need of prayer. I do not know them personally, they are a friend of my friends. They were in a car wreck due to a blow out yesterday and lost their son, who was 3 years old. Their oldest son has a broken leg, two daughters are unharmed and mom is in ICU. She is, of course, blaming herself for the loss of her son. I can not even begin to imagine the pain her family is experiencing.
Words can do nothing when someone is in a situation like this, but prayer can do more than we know.
I've never lost a child, but my son almost didn't live after he was born, he is an absolute miracle of God, so I know firsthand that God can perform miracles in our lives that are beyond our imaginations.

Please lift the Whetsell family up in prayer, and hold your loved ones tight tonight.
We never know when He is going to call us home....

Oh-so Cute Gingerbread Men!

Kennedy and I made some adorable gingerbread ornaments that I found on

I bought the cinnamon at Dollar Tree. It calls for quite a bit of cinnamon and I couldn't bear to buy 4 @ $3.29 a piece! Yeah, I'm a cheap-o!
You can't beat getting 3 huge cinnamon's for 3 bucks!!
Dollar Tree also has cookie cutters, a 4 pack for a dollar. They have a gingerbread man in them along with a candy cane, bell and snowman.









Cooking Challenge- Day 5

Ok, so I cheated! Last night we had leftovers from the baked spaghetti. There was so much leftover!
Tonight, we had Chipotle! *Hangs head in shame*
Tomorrow I'm making homemade chicken and dumplings, so I didn't give the food challenge up, just didn't do 7 consecutive days. Can you ever forgive me? lol

A New Obsession


Yeah, I'm obsessed with True Blood, what's it to ya?
A few weeks ago I decided to see what all the hype was and started watching True Blood via
Netflix. The first few episodes were ridiculous, and my husband kept telling me to
turn it off cause it sucks...and I agreed! But I was a trooper, knowing some great shows start off terribly. Well, thank goodness I did! I'm obsessed! I just started season 2. Netflix just can't send enough DVDs at a time! I even have my hubs addicted to it, it can be a corny show at times, but it's all around great!

You know what big dorks we are? We've been walking around the house randomly saying "Bill" (with a full on over dramatic accent) and "Sookie" (all drawn out like Bill says it) like they do on the show...lmbo.
You'd have to see the show to understand I guess.
Yeah, we're totally retarded.

A Little Holiday Cheer... and tutorials!

I was bored tonight, so I decided to do a little crafting. I went to Dollar Tree and collected supplies.

I already had the yarn, and some ribbon I used in the end.

From Dollar Tree;
2 packs silver bulbs, small wreath and silver bells = $4






If you're anything like me, you never know what to do with your Christmas Cards!
This cost me .78 plus tax for the wooden trees, which were already decorated. I already had the mini clothes pins and ribbon. Simple, easy... just hot glue ribbon to bakes of wooden trees, paint clothes pins and adhere to wall with whatever you choose (double sided tape, they make stuff safe for walls)




Cooking Challenge- Day 4

Today was simple again (I love simple because it's fast!)
I used the leftover meatballs from last nights dinner to make baked spaghetti.
Now, I've made spaghetti before but I've never made baked spaghetti.
It was yummy!

Make your spaghetti, put it in a casserole dish and smother in cheese. Bake until melted and gooey!
Viola!


Should I Hurt Her Now or Later?

This morning, I walked into my daughters room to find this;
The blankets and everything are from making tents, it really annoys me!
 The iPhone and cordless phone are mine..... I set them there when I walked in.

I....almost.....died.
She is so lucky she was at school!
I ended up cleaning this mess, because I just couldn't handle it. I threw out all kinds of stuff, she is going to be so upset... but you know what?
SHOULDA KEPT IT CLEAN GIRLFRIEND!
The only thing I didn't clean was her closet and under her bed. She will do that when she gets home.

Her room now looks like this;





What do you think a fitting punishment is? She is 9 (well, in a couple of weeks) and definitely knows what is expected out of her, and that this is absolutely unacceptable!

P.S. My title is a total joke, I'm not really going to hurt my kid....lol.

It's a Frizzlin' and a Dizzlin'

Brrr...
A little hard to read, but it was 26 degrees last night when I went to the post office. I can not wait to get out of New York! Twentynine Palms (desert of CA) is looking oh so good right now...lol. And then when summer rolls around, I'll be wishing I were back in NY.
I'm from Texas, I'm not used to weather this cold. In fact, I had never even seen snow until we moved to New York.

Cooking Challenge- Day 3

Tonight's dinner was quick and easy!
Yummy too. After last nights dinner, I needed something simple!

I made Saucy Meatball Sandwiches from Better Home and Gardens Budget-Friendly Meals book
I also made Cherry Cobbler from Fix-It and Forget It by Phyllis Good.

Recipes are below;

Saucy Meatball Sandwich

2 Eggs
1 1/2 cups soft whole wheat bread crumbs (I used Italian seasoned dry crumbs and wet them slightly)
1/2 cup finely chopped onion
1/2 tsp salt
1/2 tsp Italian seasoning
2 pounds ground lean beef
2- 26 ounce jars of pasta sauce
12 hoagie or bratwurst buns
1/2 cup grated cheese

Preheat oven to 350. Mix first 6 ingredients. Shape into small meatballs, arrange in baking dish and bake for 20-25 minutes, or until done. Drain well.

In large saucepan combine sauce and meatballs and heat thoroughly. Split rolls or hollow out tops of unsplit rolls. Spoon meatballs onto buns and spoon extra sauce on them. Top with Parmesan cheese.

I had a lot of extra meatballs so I will tweak a recipe for baked spaghetti that a friend gave to me and make that tomorrow night. I also used Italian bread, and hollowed the inside out a bit.

Cherry Cobbler

21-oz. can cherry pie filling
1 3/4 cups dry cake mix of your choice (this is less than a box of cake mix)
1 egg
3 tbs evaporated mix
1/2 tsp cinnamon

Lightly spray slow cooker with non-stick cooking spray.
Place pie filling in cooker and let heat for 30 minutes.
Meanwhile, mix other ingredients in bowl until crumbly, spoon over hot pie filling.
Cover and cook on low for 2-5 hours, or until toothpick inserted into center of topping comes out dry.

This was so yummy! But I will tweak it a bit next time by using two can of cherry filling, there was way more cake than cherries. I will also use a little more evaporated milk, the cake mixture was very very dry.

Cooking Challenge- Day 2

Good afternoon all!
For lunch today I made Potato and Cheese Pierogi from;
You can find the recipe in the link above.

These were delicious! I would recommend these to everyone, they were even a hit with my very picky
one year old. They are a little time consuming to make, but worth it.
I'd also like to add that these can not be screwed up. I am the worst at measuring and reading
recipes, it's sheer laziness! I didn't measure anything on this and it came out terrific!!

One thing I did tweak was I added a lot of salt and I fried them up a bit more, I liked them a little crunchier than they look in their original picture on Beckham & Blooms Blog.
I am a salt lover. I added it to the potatoes and then
I sprinkled some over the finished product and added a small dollop of sour cream.
Yum-o.

There were lots of extra potatoes, and this is fine because they were delicious and I'll just serve them at dinner tomorrow night. The garlic and onion in the mashed potatoes really made them delicious.

I cut the dough with a wine glass and then rolled the circle out a little bigger

Stay tuned because tonight is going to be a brand new meal as well....and it's a pretty involved one (for me at least...lol)

Ok, now for dinner....
I made Fried Chicken, Cuban Style (don't know why it's called fried chicken cause it's not fried but whatever) I also made Easy No-Fail Black Beans and Cuban Rice and Fried Sweet Plantains from Cuba Cocina cookbook by Joyce Lafray.

These recipes were AMAZING. Seriously, the best food I've ever made... and I'm a pretty good cook!
It was very time consuming, don't know why the beans are called easy cause they were a pain in the butt.
It took about 2 hours to finish (tons of dicing and slicing... thank goodness for my slap chop! lol) dinner up.
The food was worth every second! And I hate dinners that take forever to make.

Now for the recipes;

Fried Chicken, Cuban Style
Pretty quick and easy!

4 to 4.5 lbs. chicken pieces (I used boneless skinless chicken thighs)
3 garlic cloves, peeled and mashed
1 tsp. ground cumin
1 lime, sliced, seeds removed
3/4 cup sour orange juice **
1 large onion, very thinly sliced
1/4 cup olive oil, for frying
1/4 jar chopped pimento pieces
1 teaspoon pepper
Salt, to taste

Wash and pat dry chicken pieces. Set aside, Mix together garlic, cumin, lime slices and sour orange juice. Pour onto chicken, cover with rings of onion and marinate for 3 hours or longer.
Heat skillet and oil, saute onion slices until light brown. Add pimento, pepper and salt. Add chicken and marinade. Cook over medium-high heat for 5 mins. and then flip and cook an additional 25 to 30 mins. until done.

**To make sour orange juice mix 1/4 cup lime juice with 3/4 cups orange juice.

Easy No-Fail Black Beans
(Not as easy as they claim it to be! lol)

2 slices smoked bacon, diced
1/2 ounce salt pork, cut into pieces (I didn't have this so I used an extra slice of bacon & extra salt)
1 tbs. butter or margarine
2 garlic cloves, peeled and pressed
1 onion, diced
1/2 cup diced green bell pepper
2 tbs minced celery
2 tablespoons ground cumin
2 cups cooked black beans (follow cooking directions on package- remember to cook ahead, they take about 2 hours to cook)
1 quart fat free chicken broth
2 bay leaves
3/4 cup dry sherry (didn't have so I used white cooking wine)
1/2 cup cider vinegar
2 tbs olive oil
Salt

Heat medium saucepan on medium heat, add bacon and salt pork, when bacon turns translucent, add butter.
When melted add garlic, onion, green peppers and celery, stirring constantly until vegetables are just done. Add cumin, mix thoroughly, then add cooked black beans, chicken stock and bay leaves. Reduce to a simmer and cook additional 15 minutes, stirring occasionally. Strain beans, reserving the broth liquid. (I used my colander and put a pot under it to catch the liquid)

Heat another medium saucepan over high, add sherry and vinegar. Bring to a boil and cook until reduced to half of the amount of liquid. Add the reserved broth liquid and olive oil and reduce by about a third.
Add black beans and more water if necessary, cook for another 10 minutes. Remove 1 cup of beans and puree or fork mash, put back into pot... this will help thicken the sauce up. Season with salt.

Cuban Rice
Super easy and yummy!

1 tbs olive oil
1/2 medium onion, chopped
2 garlic cloves, minced
2 cups long grain white rice
1 cup tomato sauce
1 bay leaf, crushed (but not torn apart)
1 tsp dried oregano
1 cup chicken broth
Salt, to taste

Preheat oven to 325. Heat large skillet and add olive oil. When oil is heated, add onion and garlic and cook until not quite brown. Add rice, tomato sauce, bay leaf, oregano and broth. Reduce heat to a simmer, cover and place into oven for about 20 minutes. (I moved the rice mixture from my pan to a casserole dish as my pan can't go in the oven) Season with salt to taste.

Fried Sweet Plantains
My favorite, first time I ever made them and they were just as great, easy too!

4 ripe plantains, peeled and cut diagonally into 3/4 inch pieces (I used two, also get black ones that look rotten for this)
2 tbs olive or vegetable oil
2 tbs butter or margarine (optional, added a nice flavor to them)
Juice of 1/2 a lime
Salt

Heat oil in skillet, add plantain slices and cook for 3-4 minutes on each side. (I cooked about 2 cause my oil was super hot)
Remove and drain on paper bag or paper towels. Place on serving platter and sprinkle with lime juice and salt. (I didn't use lime juice or salt, and they were great! I didn't know how it would taste)
