Broccoli Cornbread
Grandmothers Recipe, SO SO yummy and I don't like broccoli! lol
1 stick butter
4 eggs (well beaten)
1- 8oz. cottage cheese
2 pkg. Jiffy cornbread mix (1 mexican flavor and 1 regular)
1 medium onion, chopped
1- 10oz. pkg. chopped frozen broccoli (thawed)
Drain broccoli and cook with onions
Mix all ingredients well, except oleo.
Melt butter in baking dish, add mixture and bake at 350 for 35 to 40 minutes.
(9x13 baking dish)
Italian Chicken Simmer
From Kraft Foods, super easy!
1 tbs. oil oil
3 chicken breasts
1- 14.5oz. can Italian style diced tomatoes, undrained
1/3 cup tomato paste
2 cups chopped red peppers (about 2 small)
1/4 cup grated parmesan cheese
1/2 cup finely shredded Italian 5 cheese blend
Heat oil in pan on medium high. Add chicken, cook 10 minutes, or until lightly
brown on each side. Add tomatoes (undrained) and tomato paste;
mix well, stir in peppers, cover and reduce hear to medium low.
Simmer for 20 minutes or until chicken is cooked through.
Remove from heat, stir in parmesan cheese and sprinkle with shredded cheese. Let melt.
Pumpkin Chocolate Chip Cookies
This is my mother in laws recipe, yummy.
1/2 cup sugar
1/2 cup butter, softened (I put in microwave for 15 to 30 secs, then let sit for 5 min to cool)
1/2 cup cooked pumpkin
1 teaspoon vanilla
1 egg
1 cup All Purpose or Unbleached Flour
1/2 teaspoon baking powder
1 1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/2 cup raisins, or 1/2 cup choc chip, or 1/2 cup walnuts (any or all, mix and match)
Heat oven to 350. In large bowl, combine first 5 ingredients; blend well. Stir in flour, baking powder, spice and salt, bend well. Stir in raisins, nut, or choc chips. Drop by rounded teaspoonfuls, 2 inches apart onto ungreased cookie sheet. Bake at 350 for 12 to 15 minutes or until lightly browned. Immediately remove from cookie sheet; cool.
Peanut Butter Layered Brownies
The best.
4 squares Bakers unsweet baking chocolate
3/4 cup butter (1.5 sticks)
2 cup granulated sugar
4 eggs
2 tsp. vanilla, divided
1 cup flour
1 cup creamy peanut butter
1/2 cup powdered sugar
2 squares Bakers semi-sweet baking chocolate
Preheat oven to 350. Line 13x9 pan with foil, sides extending over pan, grease foil.
Microwave unsweet chocolate and butter on high for 2 minutes or until butter is melted.
Stir chocolate until it's completely melted. Add granulated sugar, blend in eggs and 1 tsp. vanilla.
Stir in flour. Spread into pan.
Bake 30-35 minutes or until toothpick comes out with fudgy crumbs. Cool.
Beat peanut butter, powdered sugar and 1 tsp. vanilla. Spread on brownies.
Microwave semi-sweet chocolate and drizzle over brownies with spoon.
Refrigerate for 30 minutes.
